Fried chicken is an American tradition. Everyone has their own special recipe, including grandma and the colonel. This particular one uses buttermilk which adds a unique flavor. For this recipe, you'll need:
2 cups buttermilk
2 lbs. chicken parts
4 cups all purpose flour
1/2 tsp poultry seasoning
1/2 tsp granulated garlic
1 tsp salt
to taste black pepper
to taste cayenne pepper
Soak your cut up chicken in buttermilk for about 3 hours in the refrigerator, turning them occasionally. Take them out of the buttermilk and pat dry with a paper towel. Combine the rest of the ingredients in a bowl and dust the chicken pieces with this mixture.
Fry in oil until golden brown. If you have some larger chicken pieces, you may want to finish cooking the chicken in a 350 degree oven for about 30 minutes.
If you like your chicken spicy, just add a bit more cayenne pepper to your flour mixture or consider adding a cajun spice to it. A nice summer wine with your fingerlicking good chicken would be Jekel Vineyards Johannisberg Riesling. And as always, a creative cook is a good cook.
