Items needed:


4 ea             cooked pancakes

1 ea             12 oz can of peaches

1/8 cup        peach schnapps

2 cups         peach juice

½ cup          butter

½ cup          brown sugar

2 T              cinnamon sugar




Cut the pancakes into cubes and place half into the coffee cups.  Top with cinnamon sugar.   Top with the remaining chopped pancakes then slice the peaches and place on top of the pancakes in the mugs.  In a sauté pan, heat up the schnapps and peach syrup and let simmer for 5 minutes.  Fold in the brown sugar and let dissolve.  Simmer for a couple of minutes then remove from heat.  Add butter and pour over the pancakes.  Top with a little whipped cream or Cool Whip.
