COLD MELON SOUP

 

Items needed:

 

2 ea             cantaloupes chopped

1 qt             Sprite

Juice            from two oranges

Juice            from one and one half lemons

¼ cup          cornstarch

Zest             from one lemon

Zest             from one orange

To taste       sugar

 

Method:

 

In a saucepan, heat up all but two cups of the sprite.  Add the juice of lemon and orange and then add the lemon and orange zest. Bring to a boil and thicken with cornstarch. Let simmer 15 minutes. Let cool.  Place melon into blender and puree. Add to cooled soup and add sugar if needed.
