IRISH TWICE BAKED POTATO

 

Items needed:

 

1 ea                       baked potato cooked and split into two (hot)

4 strips                  bacon diced

¼ cup                   shredded cooked corn beef

2 T                        diced onions

2 T                        grated cheddar cheese

4 ea                       eggs

to taste                  salt and pepper

 

Method:

 

Scoop out the cooked potatoes leaving the skin in tact.  In a hot sauté pan, add the bacon and cook half way. Then add the onions and corn beef. Cook until onions are clear. Remove from the pan and add to the scooped out potatoes. Place the pan back on the stove and cook the four eggs well done. Place the potato mixture back into the potato shells and place in 350 degrees oven for ten minutes

Cut the eggs into strips, lay over the potato and top with cheese.
