Late Night Olives

I'm guilty. I have snack attacks late at night and often find myself searching the icebox for something good to munch on. One of my personal favorites is what I call the "Late Night Olives". No home should be without this salad. It's so bizarre that the kids usually stay away from it (that is good--the crumbsnatchers have plenty of other things to devour). It's easy to throw together, then you let it marinate in the fridge for a couple of days. You'll need:

1 ea.                red pepper
20 ea.               large green olives, chopped
15 ea.               black olives, chopped
1 cup                olive oil
1/4 cup              red wine vinegar
6 cloves             fresh chopped garlic
1 TB                 fresh chopped basil
pinch                cayenne pepper
to taste             salt
pinch                black pepper

Cut the red pepper into strips. Mix together the red pepper and olives and set aside. In another bowl, whisk together remaining ingredients. Pour the vinaigrette over the olive-pepper mixture and stir. Cover and refrigerate. As long as you keep them cold, these will hold for a good week. Serve with a brewski. It doesn't get any better than this.

Garlic is known for its magical curative powers and everyone knows of the aphrodisiac qualities of olives! Note: The aroma of this salad is quite strong. You might want to share some of this with your spouse or POSSLQ. They're not nearly as bad as the sardines my dad used to eat though! And as always, a good cook appreciates nature and what it has to offer.
