LEMON PEPPERED PARTRIDGE BREAST WITH SHIITAKE MUSHROOMS

 

Items needed:

 

4 ea             boneless partridge breast

dash            lemon pepper

1 ea             fresh lemon juiced

2 cups         shiitake mushrooms

1 t               fresh chopped garlic

½ cup          white wine

1 cup           whole butter

1/8 cup        sliced thin onion

 

 

Method:

 

Sprinkle lemon pepper over the breast of the partridge on both sides.  In a hot pan, pour salad oil and brown off the breast, cooking all the way through.  Remove the breasts and add the mushrooms, garlic and onions.  Let cook for a few minutes then add white wine and lemon juice and allow to simmer for one minute.  Remove pan from the heat and fold in the butter.  When the butter is melted into a sauce, place over the cooked breast.
