RASPBERRY CHICKEN

 

Items needed:

 

8 oz             boneless chicken breast

1 cup           fresh raspberries

½ cup          raspberry schnapps

2 cups         brown sauce

¼ cup          powdered sugar

1 T              whole butter

2 T              diced onions

to taste        salt and pepper

2 T              salad oil

 

Method:

 

In a hot sauté pan, add the oil and cook the chicken breast until done. Remove the breast from the pan and add the onions. Add the raspberries schnapps and let simmer one minute. Add the brown sauce and heat.  When hot, add the sugar and butter. At the last minute fold in the fresh raspberries.
