Stuffed Ground Round

Bleu cheese--you either love it or you hate it. If you're a lover, then here is a great way to add some zip to your routine burger on the grill. For each burger you will need:

2 ea             4 oz. burger patties
3 oz.            bleu cheese dressing
1 TB             crumbled bleu cheese
1-2 TB           diced tomato
1 tsp.           diced onion

If you want to use a commercial bottled dressing, that's fine--but, trying your own is not hard. Mix together about 4 oz. of bleu cheese (or Roquefort, the stuff with the mean green streaks), 1/3 cup heavy cream, 1 tsp Worcestershire sauce, 1/2 cup olive oil (don't use that bottle that's been up in your cupboard for 2 years--olive oil can only last a few months), 3 T of white wine vinegar, 1 tsp of minced onion and the secret ingredient: a couple of dashes of lemon pepper. This dressing will last about 2 weeks in your fridge. There are infinite variations to salad dressings. By making small variations and changes here and there, you'll finally come up with the one you like. Some people use sour cream instead of the cream and the olive oil, other people use mayonnaise. Be creative!

On to the burgers--take 1 ounce of the dressing and mix with the onion, bleu cheese crumbles and tomatoes. Place your mixture in the center of a ground round patty. Place the second patty on top and press the edges of the two patties together sealing into one. Do this for each serving.

Cook to your liking on the grill. When serving, some of the he-men might like to take some more of the bleu cheese dressing and pour it over the top of the burger. They go well with a tossed salad, some shoe string potatoes and what else?--a Burgermeister Brew, of course--and, as always, a creative cook is a good cook.
