Have you stooped your way through the local berry patches in search of those delectable fresh Michigan strawberries?? One of my daughters ate more than her weight and another ran rampant throughout. We gathered up our berries and made our way out to pay for them hoping not to be charged for crop damage.
Then off to the homesite to make some jelly and dad's famous Strawberries Romanoff. Kids, as well as adults, love the freshness and lightness of this dessert. For about six hungry critters, you'll need:
1 quart fresh whipping cream
2 quarts fresh cleaned and sliced strawberries
1/2 cup sugar
1 cup strawberry Schnapps
1/4 cup white chocolate shavings
First, heat up the Schnapps and reduce to a half cup. This cooks out the alcohol and concentrates the flavor. After it has cooled, add the strawberry slices and let set a couple of minutes. Meanwhile, whip up the cream in a medium bowl with the sugar until you have stiff peaks. Slowly fold in the berries and juice then ladle into individual glass serving cups and top with some white chocolate shavings. Voilą! Instant number one Dad Award! And as always, a creative cook is a good cook.
