STURGEON SAUSAGE

 

Items needed:

 

1 lb              Fresh whitefish

1 cup          diced fresh sturgeon

1 ea             egg white

1 cup           heavy whipping cream

1 T              fresh chopped basil

1 t               fresh chopped garlic

pinch           red pepper flakes

to taste        salt

 

 

Method:

 

In a food processor, place the white fish and puree.  Add the egg white and then the cream.  Let puree until stiff, then remove.  Fold in the sturgeon and the rest of the seasonings.  Place into a sausage casing or fill such items as banana peppers or cabbage rolls and then bake until the internal temperature is 155 degrees.
