Spicy fish stew


Items needed:


6 T              olive oil

1 ea             chopped onion

2 T              fresh chopped basil

1 cup           chopped fresh tomato

¼ cup          chopped celery

¼ cup          sliced green olives

1 cup           tomato sauce

2/3 cup        white wine

1 T              chopped garlic

1 1/3 cup     Bloody Mary mix

2 lb              mixed fresh fish

to taste        salt and pepper to taste




Heat the oil in large soup pot on medium heat. Add onion and garlic and sauté for 2 minutes. Add basil, tomato and celery and let simmer two minutes. Pour in white wine and let reduce.  Add the tomato sauce and bloody mary mix and let simmer for five minutes. Add fish and olives, cover and let steam for 10 minutes. Season stew to taste and pour over rice or boiled potatoes.
