SUMMER GAZPACHO

 

Items needed:

 

5 ea             large Roma tomatoes chopped

1 ea             cucumber peeled and deseeded chopped

1 ea             large red pepper chopped

2 stalks        celery chopped

2 T              onion

1 qt             Bloody Mary mix

4 cups         beef consume

1 T              ground caraway seed

dash            hot sauce

4 T              olive oil

1 t               chopped garlic

to taste        salt and pepper

 

 

Method:

 

In a blender, add the consume, Bloody Mary mix, onion, garlic, oil, hot sauce and caraway seed. Blend on high speed for two minutes and let chill. Line clear glass bowls with the layers of chopped veggies. When ready to serve add the soup over the veggies.
