Woodsy Veal Chops

With the weather turning and our appetites getting heavier, it's time for Woodsy Veal Chops. On those colder nights, you'll need a heartier dish that will stay with you for a while. There's not a lot of work to this one pan method. For 2 people you'll need:

2 TB                oil
2 ea.               10 ounce veal chops (pork chops can be substituted)
1 cup               mushrooms, quartered
1/2                 onion, chopped
1/2 cup             Apple Schnapps
2 ea.               delicious apples
2 cups              brown sauce
2 ounces            whole butter

Take a small roasting pan and heat the oil in it. Brown the chops and remove. Then add the mushrooms and onions. Cook for 5 minutes. Add veal chops and Schnapps and cook 2 minutes. Add brown sauce and apples. Homemade brown sauce is best, but you can always revert to bottled or canned. Cover and heat in the oven at 350 degrees for one hour. Finish with whole butter in the sauce.

Serve over some homemade whole wheat pasta available at Supino Foods on Gratiot north of 21 Mile. For a wine, try the Duna Merlot from Hungary with the chops. It's very inexpensive with a nice soft taste. And as always, a creative cook is a good cook.
